A simple meal or side that just takes a few minutes. Feeds 2-3 or 4 as a side.

Ingredients

• 12 Oz (1 package) San Juan Pasta Company Linguine
• 1 cup Chopped local tomatoes
• 2 Tbl Olive Oil
• 2 Tbl San Juan Pasta Company Pesto
• Freshly grated Parmesan Reggiano

Coarsely chop tomatoes

Boil the Linguine about 6 minutes (1 package in 5 quarts of boiling water)

Drain noodles, put back in pan, add olive oil, Pesto, and chopped tomatoes. Stir.   Sprinkle with parmesan and serve.
