Cooking Pasta

Our fresh pasta cooks much faster than dried pasta. Use 5 quarts of boiling water for each package of pasta. Add the pasta to boiling water, you can float a little olive oil on top if you wish to prevent it boiling over. You might like to add a dash of salt to the water. Stir gently with a pasta fork or serving fork to prevent sticking. Start timing when the water comes back up to a boil. Cook about 6-8 minutes or until a sample tastes done. Ravioli cooks faster, try 3 minutes until it floats then a little bit longer. Fresh pasta will start to float to the top when done.
Drain into a colander, then mix with sauce and enjoy. Do not rinse the cooked pasta.

How Much pasta do I need?

There is a old saying, one pound feeds three people. For a side dish less say 1/4 pound per person, less for a pasta salad, more for teenagers or college students.
